For over twenty years we have been offering healthy ingredients cooked in a natural way respecting the subtle balance of the human organism. Even the choice of wines and beers to pair with our dishes is aimed at products from raw materials elaborated in natural way through spontaneous fermentation, indigenous yeast or non-filtration/clarification.
Sparkling Wines
Fidora – Padova
PROSECCO DOC FRIZZANTE “il fondo”
Grape: Glera – 11% abv
Re-fermented in the bottle – Unfiltered – Organic – Vegan – Biodynamic® wine
Characterized by the lees sediment on the bottom of the bottle (“il fondo” in Italian), due to the ancestral production method which doesn’t include the disgorgement, “il fondo" is a dry, fruity, fresh and mineral wine. The prolonged contact with yeasts gives a savory finish and a balanced flavour, enriched with slight hints of bread crust.

Pizzolato – Villorba TV
PROSECCO DOC BRUT NO ADDED SULPHITES
Grape: Glera – 11% abv
Organic- Charmat/Martinotti/Tank Method
No addition of sulphur dioxide. Fermentation is then activated with selected yeasts at a controlled temperature of about 14 ºC in steel autoclaves for about a month then the wine is filtered. The scent is harmonious while the palate is fresh, well balanced and evokes the Golden apple and tropical fruits.

Grape: Pinot Noir – 12,5% abv – Harvested in 2018, early 2023 dégorgement
Organic farm from 2019
Vigna Rinetti is a 10-year-old plant at 450 meters a.s.l. After manual harvesting, the grapes undergo soft pressing with a grape/must yield of 45-50% then fermented in steel. This cru rests for at least 48 months in the bottle, after disgorgement à la glace, the sparkling wine is topped up with the addition of only the base wine of the same vintage. Winner of the “Tre Bicchieri Gambero Rosso 2024" award.

Grape: Pignoletto – 12% abv
Organic
Grapes pressed intact immediately after manual harvesting. It has a nice straw-yellow colour, good intensity at the nose. The fruity scent is what is most easily found: apple, peach with scents of sage and citrus. It has a smooth taste with an almond finish.

Re-fermented in the bottle (sparkling wine produced with ancestral method) – Unfiltered – Organic
The wine is bottled when the fermentation hasn’t ended yet, without addition of sulfur dioxide. This absolutely natural product reflects its origin: Rosé is the wine of these lands facing the Lake Garda. Never disgorged, contains the natural sediment. Depending on whether or not the yeasts are put back in suspension, it is more or less veiled. Intense and fragrant fruity aroma, with a scent of red fruit well integrated with notes of yeasts. Fresh, savory and persistent on the palate.

Organic
Dedicated to Gaetano, known as Nino: the father of Alberto, owner of the winery. Nino’s story is that of a father with a great love for wine. From the grapes of the oldest vineyard (35 years) harvested manually, “ANino" matures eight months in a cement tank, bottled and placed on the market after three months. Fresh, persistent with mineral notes.

The cherry tree (“serése" in the local dialect) is well suited to evoke spring, the season of scents and freshness. Exuberant on the nose: floral, fruity and mineral. In the mouth its “lemony" sweetness entices the drink.

Grape blend: Groppello, Barbera, Sangiovese e Marzemino – 13% abv

Produced with red grapes only, this wine is the best expression of this lucky territory, bathed by the Lake Garda. Cooled and washed to reduce oxidation and contamination, the grapes are cold-pressed in the absence of oxygen. The maceration time is carefully calculated in order to obtain the desired shade of colour and scent. Batonage in pre-fermentation and on yeasts after fermentation. Matured exclusively in steel tanks. Light pink, this wine expresses notes of extraordinary freshness: citrus, peach and apricot accents and floral tones. In the mouth it is fresh, full and balanced.

Organic / No added sulphites
Grapes grown in Valténesi at an altitude of 300m asl. A light and delicate red, with a ruby colour. The nose is fruity, fresh, vaguely herbaceus. A relatively short maceration that varies between 3 and 6 days. Vinified exclusively in steel and left to mature in the bottle.

Organic
Red wine aged for 12 months in oak barrels, with a deep ruby red colour, a full-bodied wine with a pleasantly spicy aroma in the glass. Reminiscent of small fruits, the pleasantly strong and slightly tannic flavour makes it important.
