Even the choice of wines and beers to pair with our dishes is aimed at products from raw materials elaborated in natural way through spontaneous fermentation, indigenous yeast or non-filtration/clarification.

Grape blend: Groppello, Barbera, Sangiovese e Marzemino – 13% abv
Re-fermented in the bottle (sparkling wine produced with ancestral method) – Unfiltered – Organic
The wine is bottled when the fermentation hasn’t ended yet, without addition of sulfur dioxide. This absolutely natural product reflects its origin: Rosé is the wine of these lands facing the Lake Garda. Never disgorged, contains the natural sediment. Depending on whether or not the yeasts are put back in suspension, it is more or less veiled. Intense and fragrant fruity aroma, with a scent of red fruit well integrated with notes of yeasts. Fresh, savory and persistent on the palate.

Fidora – Padova
PROSECCO DOC FRIZZANTE “il fondo”
Grape: Glera – 11% abv
Re-fermented in the bottle – Unfiltered – Organic – Vegan – Biodynamic® wine
Characterized by the lees sediment on the bottom of the bottle (“il fondo” in Italian), due to the ancestral production method which doesn’t include the disgorgement, “il fondo" is a dry, fruity, fresh and mineral wine. The prolonged contact with yeasts gives a savory finish and a balanced flavour, enriched with slight hints of bread crust.

OLTREPÒ PAVESE DOCG PAS DOSÉ “Riva Rinetti”
Grape: Pinot Noir– 12,5% abv – Harvested in 2018, early 2023 dégorgement
Organic farm from 2019
Vigna Rinetti is a 10-year-old plant at 450 meters a.s.l. on calcareous-clayey soil with north, north-west exposure. After manual harvesting, the grapes undergo soft pressing with a grape/must yield of 45-50% then fermented in steel. This cru rests for at least 48 months in the bottle, after disgorgement à la glace, the sparkling wine is topped up with the addition of only the base wine of the same vintage.

Grape blend: Lambrusco (85% Grasparossa di Castelvetro DOP, 15% Sorbara DOC) – 12% abv
Organic Method
Intense pink with fine perlage and good persistence with velvety and elegant scents, strong intensity. It contains a wide range of fresh aromas, from rosebud to lemon apple, to get lost in a cherry finish. Rich persistence, recalls the notes perceived to the nose, excellent balance of harmony and freshness.

The proximity of the sea and its winds, give the grapes a characteristic sapidity that enhances the aromas. Fresh bouquet, fruity with hints of Golden apple and white flowers.
The taste is fruity and fragrant, fine and elegant on the palate with marked flavour and persistence.

Pizzolato – Villorba TV
PROSECCO DOC BRUT SENZA SOLFITI AGGIUNTI
Grape: Glera – 11% abv
Organic- Charmat/Martinotti/Tank Method
No addition of sulphur dioxide.
Fermentation is then activated with selected yeasts at a controlled temperature of about 14 ºC in steel autoclaves for about a month then the wine is filtered.
The scent is harmonious while the palate is fresh, well balanced and evokes the Golden apple and tropical fruits.

Organic
The cherry tree (“serése" in the local dialect) is well suited to evoke spring, the season of scents and freshness. Exuberant on the nose: floral, fruity and mineral. In the mouth its “lemony" sweetness entices the drink.

Soft pressing with extraction of the free run juice only. Fermented by wild yeasts in a stainless steel tank and matured there on fine lees.

Organic
Native white wine with a light golden colour with greenish reflections. Its pleasant and delicate scent is reminiscent of flowers and tropical fruit. Full, harmonious flavour, with a persistent aromatic aftertaste. It is excellent with appetizers and first courses, fish and shellfish.

White wine with a particularly pleasant copper colour and a pleasant aroma. Notes of persistent, rounded and balanced ripe fruit emerge. It is perfect with tasty fish starters, seafood risottos, grilled but also baked and fried fish main courses.

Produced with red grapes only, this wine is the best expression of this lucky territory, bathed by the Lake Garda. Cooled and washed to reduce oxidation and contamination, the grapes are cold-pressed in the absence of oxygen. The maceration time is carefully calculated in order to obtain the desired shade of colour and scent. Batonage in pre-fermentation and on yeasts after fermentation. Matured exclusively in steel tanks.

Uva: Merlot 100% – 14% abv
Organic
Red wine aged for 12 months in oak barrels, with a deep ruby red colour, a full-bodied wine with a pleasantly spicy aroma in the glass. Reminiscent of small fruits, the pleasantly strong and slightly tannic flavour makes it important.
